The term Tuco derives from the Genoese tuccu, an old word used to name a stew made from tomato and stewed meat (beef, pork). The Tuco is a very old sauce, and with a strong Genoa-Lima interrelation due to Italian immigration to Lima in Peru in the 16th Century. The Tuco is an absolutely traditional meal for ancient Lima families. In recent years, a Tuco different from the traditional Lima’s Tuco has become popular, it is the “Red Chicken Noodle”, which is really a new dish. Lopesa brings the best of nature to your table.
It is traditionally used to season pasta (red noodles) and polenta.
