Ginger and salt
Presentation:
The Ginger or Kion (as it is known in Peru, derived from the Chinese 薑 jiāng) (Zingiber officinale) is a plant from the zingiberaceae family. Highly appreciated for its fragrance and spicy flavor, it is added as an ingredient in many dishes. The tender stems are juicy and meaty, and can be used as an aperitif, pickled, or added as an ingredient in several recipes. Those that are more mature, being very spicy, are used more as a spice to hide other fragrances and flavors that are stronger.
It is also used (powdered kion) to flavor fruit desserts, such as baked apples, as well as to make pastries, where the well-known gingerbread cookies stand out. Chicken broth, chaufa.
Each meal is unique in its aroma, color, flavor and preparation, but it can always have a special flavor when the ingredients are of the best quality.
