The Cumin is native to the Mediterranean basin; its aromatic seeds are used as a spice. It can be used in grain (seeds) or ground, and as with all spices, it is recommended to grind it just before use. The flavor it contributes to dishes comes mainly from its fragrance, so if it is used in grain, it is usual to roast the seeds so that the essential oils express all their strength.
