The Achiote, whose scientific name is Bixa orellana (after the conqueror Francisco de Orellana) is a natural coloring and condiment originated in the tropical zone of America. It comes from the tree of the same name, from whose fruit seeds are extracted and give rise to the spice. It is a natural yellowish-red pigment, which is extracted from seeds and is widely used in the food and cosmetic industry. Its use dates back to pre-Columbian times. It is used as a body coloring (for example as a lipstick), and as a food and beverage coloring. Currently it is still used as a spice in the preparation of several traditional dishes in Latin America. It also serves as a coloring in ice cream or sausages. Lopesa brings to Peruvian homes the flavor and color of the Achiote.

It is ideal for flavoring meats, fish and seafood, it is used to color locros and sancochos, and to season potatoes and rice.
In addition, although it is possible to use the seeds directly for cooking, it is common to use it in pastes and powdered seasonings that often combine it with other spices such as Lopesa pepper and Lopesa oregano.
